Vegetarian Recipe – Curried Veg Burgers

Vegetarian recipes can sometimes evoke feelings of boredom and tasteless food. But I assure you, there are some vegetarian dishes that are fabulous. Curried veg burgers fall into this category and they are very tasty.

I found this dish in a book called Vegetarian Cooking by Carole Handslip which was first published in 1985. It’s a very tasty dish and so simple to make. It’s also budget friendly and it can go a long way.

Ingredients:

  • 2 tablespoons of oil
  • 2 onions, chopped finely
  • 1 clove garlic, crushed
  • 2 carrots, crushed
  • 2 celery sticks, chopped (I left these out because I do not like celery)
  • 2 teaspoons curry powder
  • 2 tablespoons chopped parsley
  • 1 pound potatoes, boiled and mashed
  • salt and pepper
  • whole wheat breadcrumbs for coating (I used plain breadcrumbs)
  • oil for shallow frying

Directions:

Heat the oil in a pan. Add the onions and fry until softened. Add the garlic, carrots and celery and fry for five minutes, stirring. Mix in the curry powder and cook for one minute.

Add the fried vegetables and parsley to the potato and season with salt and pepper to taste. Divide the mixture into eight pieces, shape into rounds and coat with breadcrumbs. Press to flatten slightly and fry for 2 minutes on each side until golden.

Serve your curried veg burgers on bread or in a wrap and garnish with your favourite toppings.
